Pumpkin and Spice

As a pastry-chef-in-training, I love to eat, entertain and create. I spend a lot of time in the kitchen, and I love sharing new things I find, try and bake. This blog chronicles the adventures I have with food- at home,at school, on vacation and in my career. I’m especially excited to share my adventures this coming fall, as I will be starting a six-month externship as a baker at a luxury ski resort in Utah.

Can I Make S'more Marshmallows?

I was really looking forward to going to work today. I always like work, but I was genuinely excited about my shift today. Why? Because I was going to get to make one of my favorite things to make... Marshmallows!Big ol' marshmallow-covered tart!

One of the desserts we're featuring this week is a S'mores tart- a graham cracker crust with a dark chocolate filling and a layer of marshmallow. Last night, D was grumbling that we were going to have to make marshmallow to top the tarts with tonight. I immediately perked up. "Oooooh, really?! I love making marshmallows!"

An Egg-Free Dessert

Sorry for the lack of communication lately. My internet connection is terrible, and uploading photos is a bit of a chore. My camera is also acting up, and sometimes decides it just doesn't feel like focusing, and all I get are pictures that look like I smeared Vaseline on my camera lense.

This is my last week at the ski lodge I'm currently working at. The interns Yummy and egg-freemove around from shift to shift and lodge to lodge, to give us an oppertunity to try everything. Only three more working days left until my switch.

A Special Dessert

I'm a little excited, because this week, the restaurant is going to be featuring a dessert I came up with. It's creamy, rich, indulgent and features everyone's favorite childhood treat- Oreo cookies! What is it? Cookies and cream OMG! Oreo cheesecake!cheesecake! I know, yum, right?

A chocolate cookie crust, vanilla cheesecake with Oreo cookies mixed in, topped with dark chocolate ganache and garnished with white chocolate-Oreo bark. Of course, C, my supervisor and I had to sample it. You, know, for quality purposes...

Our Sundance Day

The Egyptian TheatreToday was an early, early morning- at least for me, especially after a late night at work. The alarm went off at 6a, after a mere five hours after I went to bed, but Sissy and I had big plans for the day, so I peeled myself out of bed to get ready.

Saturday night, after getting off work, I "finalized" our Sundance schedule for today. Since all the films today were sold out, we were going to have to waitlist for tickets. There's no way to know how many waitlist tickets will be available for any movie until minutes before showtime, we wanted to have serveral options available. I made a list with film names, the theatre they were playing at, the times we could get in waitlist lines, and the showtimes.Got Waitlist Numbers! No Tix Yet...

The New Shift

I started my new shift this week. I'm off midnights, and am now working the evening shift at the seafood restaurant. It's actually kind of a nice shift, because I'm sort of a night person, and I can sleep until 9:30 or 10a, and still Raspberry truffle browniesgo to the gym before work. It's awesome. I love not waking up early.

When I arrive, I generally duck into the employee cafeteria for a quick bite to eat- usually a sandwich and some fruit. I eat quick, then head to the bakery to start work. The restaurant doesn't open until 6:30p, so prep work occupies the first part of my shift. Usually it involves making sauces, baking mini-cookies, assembling tarts and making dessert items that need to be done day of, like chocolate mousse. After all the prep work is done, we have to slice and portion all the desserts. Since the restaurant is buffet, we then have to plate and garnish all the desserts.
